The position of Senior Flavor Scientist within the Food R&D team offers an exhilarating and dynamic opportunity where you will take charge of the sensory learning objectives for particular initiatives in various food categories.

The Senior Flavor Scientist will serve as a subject matter expert (SME) and be the key person for the company in collaborating with strategic flavor house partners to deliver short and long-term key innovation priorities. The Senior Flavor Scientist will also lead the overall flavor development program and guide the project team in the decision-making process to achieve key results. The flavor scientist will advance the fundamental understanding of flavor from various cultivated meat technologies that support the introduction of new superior products.
This role requires hands-on experience with a variety of analytical techniques for flavor analysis, The Senior Flavor Scientist will own the analytical toolbox and develop methods to inform decisions for the enterprise. The ability to lead, design, and deliver sensory projects independently and work collaboratively with other scientists, internal technical groups, and external vendors is critical for success in this role.
Responsibilities may also include managing a small team of flavor chemists and leading the training and development of these direct reports and internal partners.
Responsibilities include
- Lead flavor development projects that result in the creation of cell-cultivated meat products that meet the target flavor profiles set by the project team.
- Design and conduct experiments that deploy a variety of analytical assays (e.g., GC-MS, GCO) to identify the key flavor compounds in creating cell-cultivated meat and seafood materials.
- Design and conduct experiments to discover, understand, and create flavors for cell-based meat and seafood products.
- Integrate information from cross-functional teams in building and developing flavor technology platforms to meet the company’s short and long-term goals in delivering delicious cell-cultivated meat and seafood products.
- Conduct research to understand flavor change over time to optimize product flavor profiles.
- Collaborate with external suppliers/partners in identifying new flavors and flavor technologies.
- Analyze data, evaluate results, form conclusions, implement/document process improvements, and integrate previous and current results to determine the next experimental steps and the impact of long-range project goals.
- Communicate reports in a clear and concise manner to cross-functional teammates and the senior leadership team.
About you
- B.S., M.S., or Ph.D. in Flavor Chemistry, Food Science, Material Science, Biochemistry, Bio-organic chemistry, or applicable industry experience in related areas.
- 10+ years of experience working in the flavor industry, preferably with meat flavors, poultry, and seafood products in both ready-to-cook and ready-to-eat products.
- Experience in reaction flavors, flavor interactions, and flavor maskers.
- Experience in lipid chemistry, key flavor and aroma compounds in meat and seafood.
- Ability to utilize statistics programs to analyze and interpret data, communicate and provide recommendations as needed.
- Can identify and generate flavor compounds to meet overall product target flavor profiles.
- Deep knowledge of meat flavor chemistry and creating flavor profiles of meat and seafood products.
- Experience in the product development process, and designing and developing analytical assays to identify key flavor compounds.
- Experience in applied sensory research is highly desirable.
- A self-starter with high curiosity, highly motivated by discovering and learning new technologies.
- Comfortable with tasting and assessing a range of animal proteins.
- Hands-on experience with GC-MS and GCO equipment.

Key Contributions in First Year
- Identify key flavor markers to meet target cultivated meat flavor profiles set by the project team.
- Build and develop flavor technology platforms for creating delicious cell-cultivated meat and seafood products.
- Partner with cross-functional teams to interpret experimental results in the context of impactful business decisions.
- Design and execute experiments for sensory and analytical testing.
- Serve as SME for cross-functional collaboration with FR&D, Analytical, Upstream, Sensory Task Force, and Marketing teams.
- Drive analytical approaches to identify and quantify key flavor compounds.
Compensation Range: $140,000 - $176,000*
*Pay may vary depending on factors including job-related knowledge and skills.
